Is it customary for new recruits to buy their boss(es) gifts as a boot shinning ritual ie. "omiyage"?
What do you think of a very good bottle of red Pinot Noir from Bourgogne? (I don't like Bordeaux)

I am not sure. It's definitely OK in a social situation - e.g. if he invites you home with colleagues - but I would not bring a bottle of wine to the office.
To the office, I would bring some harmless European cookies that he can open right there and enjoy with his colleagues or over a cup of tea with you.
Or, bring him a packet of fine English tea as a personal present (he can also share that). Anyway, something which does not look too individual.
