    Default Required licenses to open a cafe/restaurant

    My friend was telling me if you want to open a cafe or restaurant that makes food you need a cooking license in Japan. Any one will do. Even the quick written tests. She also said that in order to qualify to take those tests you need to be employed by a cafe or restaurant at the same time. For two years or something ridiculous. I find all of this hard to believe. If I want to open a cafe or restaurant all I need is money and a business license I would think. No?

    #2. Saw another thread about a liquor license but no replies. What do you need to be able to serve beer or wine at a cafe? I heard there is special required insurance too.

    I think all you need is a hygeine certificate and a basic cho-rishi certificate (catering). But I heard that quite a few cafes don't even need that. There are cases where the certificate holder is just on the paper for business purposes and that there are no cert holders involved in the actuall day to day running of the place. An avenue worth exploring if you don't want to get bogged down with the red tape. Sorry I can't be more specific. Hopefully someone will be along inabit to correct me or point you in the right direction.

    yes, chourishi. That was it.

    BUT Do you need to be employed in Japan by a cafe or restaurant in order to be qualified to take that chourishi test?

    Yeah I'm afraid that's what I heard, but someone should verify that for you somewhere other than here for peace of mind.

    The person I know who has one worked in catering for a number of years before taking it. As for experience outside of Japan, I have no idea if that would be valid. If it was verifiable I don't see why not. But this IS Japan so they might consider it invalid just for that reason,

    Like I said, if you get someone to put their cert up on behalf of your business you need not get one yourself. The downside is that you are beholden to them for the favour.

    You'd have to have a kenben about once every 3 months too.

    Well I just found out tonight coincidentally that my friend has both a regular choushin menkyou shomeisho and fugu menkyou shomeisho (license to cook fugu!).

    He said I can use his so problem #1 taken care of.

    Do they want my own haisetsu?

    You need to assign a person in charge of food hygiene at each facility, who must be a qualified cook, dietitian, confectionery hygienist or those who taken the prescribed lectures of food hygiene sponsored by Prefectural governors. Therefore, you do not necessarily have to be (or employ) a qualified cook but just someone of you must have attended the food hygiene lecture for opening a restaurant.
    For the outline and schedule of the food hygiene lectures, you can make inquiries to the public health centers in each Prefectural government.

    Arrow Are you serious about it?

    regulation regarding these establishments are really tough in Japan.Why don't you think some other activity say like a dance school.I will also join you.

    do they allow us to correct what need to be done or it will be final inspection. We will lose everything.

    You do not need to be employed by anybody to take the hygiene test , Anybody can open a restaurant or a pub for that matter ,

    Your friend who does Fugu , Well that's a whole new ball game when it comes to being certified to clean that fish .

    The kitchen inspection is a breeze if you have installed all that is on your list of must haves

    your local city office should have all the info you need.
    My wife just got some info for starting a cafe here out of our house. There is a walking path that goes along our property so she wants to put a counter on the fence line and serve snacks, coffee, tea, alcohol. A neighbor works at the city office so she wanted it all official. It was easy, she got some paperwork, listened to an hour lecture, signed some papers and got a couple little pieces of paper that says she has a "business" (cafe).

    Will your kids be working for the wife? If so, what are the laws regarding child labor?
