Give us a city and your local favorite ramen shops there. Maybe we can create a decent thread--or not.

Edit: If anyone knows the awesome place somewhere in Gion, Kyoto, that I can't find anymore due to being too drunk last time, please let me know. It looks blurry and tasted kind of beer-ish, and it has my umberella in it.

    Kyoto ramen kaido: ラーメン軍団.

This isn't for 草食 types who think Ippudou dishwater is real ramen, but I've never had better.

Nearby, あきひで is a somewhat inconsistent second favorite.

This place is fun for the show--the ramen itself is okay. But you have to sit at the counter and order the negi-ramen: it comes out, they put it on the counter with a pile of negi, then pour very hot oil (at ignition point) on top--can be a little nerve-wracking for some.

Some slightly out of the way place in Kashimada. Never cared about the name, but the ramen was good and people brought their kids to teach them what the good stuff tasted like. Ugly place, which suited me fine. I could find it on Google Earth easily, but why bother? Everybody has a favorite already.

くるり (Kurori Ramen) #1 in all of Japan
    麺処 くるり

If you have a list of the top 30 ramen shops in Japan, you gotta start at #1, right? I mean, I haven't seen that Cloverfield movie, but Tokyo could blow up tomorrow and I'd be stuck with the taste of, gasp, #25 in my mouth.

    東京都新宿区市谷田町3-2
    Ichigaya Tamachi 3-2
Near Ichigaya station, just cross to the north side of the river and walk east for about 5 minutes.

This place is interesting. The master is ____ing serious as hell. You're 28, have an hour line outside your place, and you won some awards. Relax homey!

The key here was the amazing miso broth. A few different kinds of miso, cooked over high heat to reduce it all down. Matched with great chyaushu (pork) and noodles. All the details were accounted for, even the glassware for your water was unique. At the end of your meal, the staff brought a shot size glass of ice cold green tea. Damn, I want to go there now. Think it's open at 1am?

Lightbulb Menou Ramen ~ 面王ラーメン (Tokushima City ~ 徳島市)

Menou is a tiny ramen shop that serves quite nice Tokushima ramen and over the years has become a bit of a landmark among those who live in the prefecture. One shop among half a dozen that line the street, on a busy weekday or on the weekend, it’s not uncommon to see a line forming at the entrance. There are two main reasons for this: the shop is small and the ramen is cheap.

Before entering the shop, a big decision must be made. Rather than peruse a menu and place your order to the waiter inside, you must make your decision and purchase a ticket from a machine situated to the right of the door. In addition to the standard selection of toppings (soft-boiled egg, onions, ground meat, etc…) you are also given a choice of noodle consistency. You can choose between soft, regular, firm and extra-firm. Go with what you’d like, but I’d suggest starting with regular (ふつうめん).

The interior of the shop has a couple of tables for small groups and one long bar that runs the length of the wall on the right-hand side of the shop. After taking your seat, someone will come around to collect your ticket and after a few short minutes, your food will arrive. Although their ramen isn’t the most wonderful Tokushima ramen in the prefecture, you can’t beat it terms or price. For 760 yen you can get a bowl of ramen and five pieces of gyoza.

For good quality ramen in very local feeling shop, visiting this Tokushima landmark is something that must be done at least once!

Lightbulb Fukuchian Ramen ~ ふくちあんラーメン (Fukuchiyama City ~ 福知山市)

By all accounts the most famous ramen restaurant in Fukuchiyama. With a bowl of “Simple Ramen” costing ¥640, Fukuchian is on the expensive side, considering the cuisine. But for those who favor the thin egg noodles, it does not disappoint.

Walking through the entrance, one is greeted with a loud and in unison “Irasshaimase!” by the cheerful and energetic staff. The restaurant is decorated with simple but unique manner, with racks of labeled ingredients and the machine used for making ramen noodles on display. There is plenty of both counter and table seating available.

The signature “Fukuchian Ramen” is white-brothed, thick, flavorful, and full of fresh ingredients such as sprouts, green onions, sliced pork, pot roast, and boiled egg. There are several other varieties of ramen on the menu, including a “Red Spice Simple Ramen” which at the medium spice level made this reviewer’s eyes water. In the corner, there is a condiment bar with things such as pickled ginger, sesame seeds, and garlic. Standard ramen shop fare such as gyoza and karaage are also available.

Fukuchian Ramen is an easy five minute walk from the south entrance of JR Fukuchiyama Station, on the north side of Route Nine. It is a perfect place to satisfy the ramen craving one might get while stopping over at Fukuchiyama Station.

Part of a small chain of 13 shops operating mainly out of Ehime, Ryoka offers and interesting assortment of ramen dishes in an inviting and active store. With several choices of soup, toppings, side dishes and presentation, there is surely something that everyone can appreciate.

The restaurant is open and bright and offers several different seating options. You can grab a table, a booth or sit around the counter if you’re alone or the place is full. Regardless of your choice, you’ll be able to soak in the minimalist industrial design of shop and enjoy their selection of J-pop and oldies rock. All the while, you’ll hear and see the staff hustling around preparing and serving their famous ramen to their hungry customers.

With their top five most popular dishes listed on their packaged wet-towels, it’s easy to make a choice if you’re a first time customer. Going with their most popular dish, I tried the tokushioajitama ramen (特塩味玉ラーメン). A salt-based ramen with a sliced soft-boiled egg, a couple pieces of pork and several different vegetable toppings, this is what the shop is known for. The texture of the noodles was quite good and the soup was surprisingly not salty for a salt-based broth.

With many other dishes to choose from, I’m looking forward to heading back to Ryoka and finding out whether their other options are as good as what I tried tonight. Do you have any recommendations?

    Ichiran is great!

The quiet, organized flow of the customer queue + great soup + original quirkiness somehow reminds me of the Soup Nazi from Seinfeld...

yummmmmmmmm Ramen Jiro was as good as I had hoped.

Really fatty strong porky stock, tonnes of bean sprouts, garlic if you want it, egg too if you want it, perfectly salty roasted pork and nice al-dente noodles. The place we went to is only a 7-8 min walk away from Shinjuku station, if you look on google maps it's on the north west side of building 19 in Kabukicho area.

What do people know about the Ramen Jiro chain? I think I might make it a bit of mission to try and visit them all while I am here in Tokyo.

If you like Kyushu tonkotsu ramen:

In many places around the country, you can find Ippudo:
    http://www.ippudo.com/

Ichiran (there's one not too far up the road from Hachiko)
    http://www.ichiran.co.jp/

And in Sendai, there is Oppeshan Ramen... it's supposed to be Kumamoto ramen, but the shop exists in Sendai only for some reason.. at any rate it is fantastic, though a bit fatty.

Ramen Tokyo has a pretty good meta-guide on Ramen Jiro: http://www.ramentokyo.com/2007/06/ramen-jiro.html

The original Ramen Jiro (outside the gates of Keio University) in Mita/Tamachi is here: http://maps.google.com/maps?f=q&sour...%EF%BC%94&z=16

Frankly speaking, I think the whole Ramen Jiro phenomena is overblown and its appeal - largely amongst college kids - is largely more quantity versus quality. The fact that one is advised to 'prep one's stomach' beforehand and also afterward to ward off indigestion makes you wonder how different this is from trying to down five greasy Big Macs or Whoppers.

Stopped by Ramen Jiro in Shinjuku last night. Soup was great, but wasn't too much a fan of the noodles. They were a bit too thick for my taste, and kind of soggy. Also, my stomach is rioting today, but that may very well be the whiskey that followed the ramen.

Can someone help me please? I can't eat pork, even the smell of tonkotsu is enough to make me nauseous.

How can you know what the soup is made from? There's some places near my home that have chicken and chatsu (?pork) ramen but I don't know what the soup is.

I tried this place and it was pretty good but a bit out of the way for me.

Shio ramen that changed my worldview on ramen. Hakodate. From coming down 八幡坂 take a right at the bank. Along that percieved wall is a hidden ramen place over 100 years old. In 2007 it was an 85 yo ojichan making and his 80 yo wife serving. Who ever thought shio ramen could be that heavenly. If you cant find the place, just ask around, its famous.
