    On the Japanese Consulate's webpage it say that I need to have a photocopy of the front and back of my CoE. I was wondering if I actually needed it to be done on nice printer paper/professionally, or if just normally copying it from a home printer with normal paper is acceptable.

    Regular ole fashion photocopy is fine.

        If you want to impress them, print it on rice paper. They will know that you understand the Japanese soul and process your visa within minutes and then bow to the floor when you go pick it up.
